Ceylon's authentic cinnamon-infused cinnamon rolls—deliciously delightful!

In a tiny saucepan, melt the butter, milk, and a pinch of salt until it’s a gooey love fest. Let it cool down to a cozy lukewarm cuddle.

In a big, happy bowl, mix together the flours, yeast, Keerna ceylon cardamom, and sugar like you’re stirring up a magical potion. Create a little well in the centre, crack in those eggs, and pour in your warm milk mixture. Stir it all together until you’ve got a sticky dough that might just want to be your new best friend. Your hands might get involved because this dough is a bit of a handful!

Slap a teaspoon of olive oil on your work surface like it’s a dance floor. Plop that dough down and knead it like you mean it for 5-8 minutes, using a plastic scraper to help if it’s being clingy. Resist the urge to add flour—nobody likes dry buns! Keep going until it’s smooth, elastic, and ready to rise to the occasion.

Shape it into a ball and tuck it into a greased bowl, covering it with a clean tea towel like you’re putting it to bed. Let it hang out in a warm spot for an hour until it’s doubled in size, like a fluffy cloud!

For the filling, mix up that softened butter with half the sugar and a tablespoon of Keerna Ceylon True cinnamon until it's a sweet, creamy dream. In a separate bowl, mix the rest of the sugar and cinnamon and set it aside like a secret weapon.

When your dough has risen, roll it out into a rectangle on a floured surface. Slather that cinnamon-sugar-butter goodness all over! With the long edge closest to you, roll it up into a delicious cylinder and slice it into 12 even pieces.

Place each slice on a paper cupcake case on a baking tray or into a greased muffin tin for those extra tall, domed buns. Cover them again with a tea towel and let them rise for another 30-45 minutes until they’re ready to shine.

Preheat that oven to 200C/180C Fan/Gas 6. Brush the tops with beaten egg and sprinkle generously with that cinnamon sugar magic. Bake for 10 -12 minutes until they’re golden brown and smelling divine. Enjoy warm with a steaming cup of Ceylon Tea —pure bliss!
